    Welcome to the exciting world of wine! For individuals new to wine study, the WSET Level 1 in Wine qualification is a perfect place to start your wine journey. This course provides a beginner level, hands-on introduction to the world of wine. It is suitable for those starting a wine career or pursuing an interest in wine. You’ll explore the main types of grape varieties and styles of wine through sight, smell, and taste, while also gaining the basic skills to describe wines accurately and understand food and wine pairings. During this course, you will participate in guided tastings of 10 different wines.

    You will learn about:

    ~ Grape growing and winemaking
    ~ Principal grape varieties
    ~ Primary styles of wine
    ~ How to taste and describe wines
    ~ How to pair food and wine
    ~ Storage and service

    Assessment:

    This course is 6 hours of classroom time, which includes a 45-minute closed-book exam of 30 multiple-choice questions. A total mark of 70% is required to achieve a pass. All students who pass will be issued with a certificate and will be mailed a lapel pin. 

    Extras:

    ~ Enrolled students will receive a 10% discount on to-go bottles of wine purchased online from Cree Wine Company for up to 30 days after the end of your class.

Chave represents 16 generations of unbroken lineage committed to the production of some of the finest Syrah, Marsanne, and Roussanne on the planet.

    Val D'Aosta Wine Dinner

    It was (way!) back in the late spring of 1992 when I had my first encounter with the food and cuisine of the beautiful Val d'Aosta region of northwest Italy. While spending a few days late season skiing in Breuil-Cervinia, at the base of the picturesque Matterhorn, I had one of the most memorable meals I have ever had! It was at a beautiful restaurant called La Niege d'Antan, and it was a beginning of a love affair with the region, and especially its food and wines, that lasts to this day!

    Join us on June 6th when Executive Chef Andrew Lattanzio and I recreate that special experience with a menu of traditional fare of the region, paired its little known but incredibly unique and delicious wines from a host of local grape varieties.

    I for one cannot wait for this Alpine-inspired dinner, and hope you will join us! All wines will be available to purchase "to go" - don't miss a great opportunity to expand your wine horizons, and taste, learn, and try before you buy - Cheers! Chris

    REGISTRATION DEADLINE - SEPT 2

    The WSET Level 2 Award in Wines is a beginner to intermediate level course intended for people who have little or no prior wine knowledge. There is no pre-requisite requirement to complete Level 1; you may start at Level 2 should you choose. 

    This course suitable wherever a good level of wine knowledge is required to underpin job skills and competencies. It is also useful for those who have a general interest in wine and wish to broaden their knowledge. You’ll gain knowledge of the principal and regionally important grape varieties of the world, the regions in which they are grown, and the styles of wine they produce. You will learn to read wine labels from the main wine-producing regions of the world and giving basic guidance on appropriate food and wine pairings as well as service. You will taste 40 different wines from around the world and learn how to describe these wines with confidence. 

    You will learn about:

    ~ How environmental factors, grape-growing, winemaking and maturation options influence the style and quality of wines made from eight principal grape varieties
    ~ The style and quality of wines made from regionally important grape varieties
    ~ How grape varieties and winemaking processes influence key styles of Sparkling wines & Fortified wines
    ~ Key wine labelling terms
    ~ How to pair food and wine
    ~ Storage and service

    This course is offered over six sessions that are each 3 hours. 

    Assessment:

    This course is 18 hours of classroom time, which includes a 1-hour closed-book multiple-choice exam. It is expected students will also need to commit to 11 hours of private study.

    ~ Up to 30 days after the end of your course, the corkage fee for opening bottles on premise at Cree Wine Company will be waived for enrolled students.

    REGISTRATION DEADLINE - SEPT 24

    The WSET Level 3 Award in Wines is an advanced and highly respected qualification. WSET Level 3 is designed to give a thorough, in-depth understanding of the factors that account for the style, quality and price of the principal still, sparkling and fortified wines of the world. You will learn all major grape varieties and wine styles produced around the world. This course is not easy, but we will set you up for success! This course includes tasting 70+ bottles of carefully selected wines.

    You will learn about:

    ~ The characteristics of still, sparkling and fortified wines produced in the principal wine producing regions of the world
    ~ How the key natural and human factors in the vineyard, winery, law and commerce can influence the style, quality and price of these wines
    ~ The ability to provide information and advice to customers and staff about wines
    ~ How to describe wine using the WSET Level 3 Systematic Approach to Tasting Wine® (SAT)

    At the end of this course there is an exam that consists of 2 wines tasted blind, a 50 question multiple choice paper and a 4 question short answer exam. All students who pass will be issued with a certificate and will be mailed a lapel pin.

    Meet the Maker: Cooper's Daughter Spirits

    Meet Stuart Newsome of Cooper's Daughter Spirits and taste through a lineup of their delicious, locally sourced, produced and aged spirits!

    Cooper’s Daughter Spirits is a woman-owned and family operated distillery, cooperage, and apple orchard. The name of the distillery tells the story of a father and daughter who combined their passions to create a business together. Stuart Newsome’s passion is history and he had a 42 year career in historic restoration. His daughter, Sophie Newsome’s passion is the farm-to-table movement.

    Stuart hand makes barrels on site from locally sourced American White Oak, which are used to age their bourbon and whiskey. The distillery and cooperage are located in a former circa 1800s carriage house along the Claverack Creek, NY. Local grain, fruit, botanicals, and tree syrups are the foundation for this distillery’s seasonal batch spirits. They produce bourbon, whiskey, vodka, amaro, liqueurs.
